Lapsang Souchong

This large-leafed black tea from Fujian province grows in the Wuyi Mountains.  The leaves are smoked over pine wood fires and then pan-fried and rolled. The intensely black leaves give a dark red liquor and distinctive smoky aroma that goes well with savory dishes.
